This key lime juice, made with 100% Key Limes from Key West, Florida, is from concentrate. It is available in a 16-ounce bottle, providing enough juice for 3 or 4 key lime pies. The juice appears and smells very fresh, with a distinctly bright and slightly bitter key lime flavor. At that time, limes were abundant in the Keys, and once the lime juice was added to the egg yolks and milk, the mixture would begin to thicken or ‘set’. According to Key West locals, known as "Conchs," the true Key Lime Pie is not baked; as they say, “the lime does the cookin” of the ingredients.
